Had a little celebratory dinner this weekend and ventured to @mitocaya. Both Josh and I were seriously blown away by the incredibly flavorful, gorgeously presented food and drinks as well as the wonderful service. My only regret is that it took us this long to visit!

Today’s salad got a bit out of hand but was one of the best ones I’ve made to date. The base was romaine, cabbage and shredded carrots that I mixed up with fresh mint, basil and green onion. Then I topped it off with red onion, radish, cucumber, peppers, vermicelli noodles, peanuts, chicken and my homemade peanut dressing. So light and fresh and perfect for the heat wave we are having in Chicago!

This salad was incredible. Kale massaged with lemon, EVOO, salt and pepper topped with grilled chicken, red onion, green apple, candied almond slivers, sweet potatoes, goat cheese and balsamic glaze. Looking forward to having this for dinner multiple nights this week!

Chocolate custard with peanut butter and banana. Name a better combo, I’ll wait...

Had dinner at @odachicago last night and this appetizer sampler with their gluten-free Georgian cornbread was to die for.

I cannot tell you how excited I am for a 100% gluten-free and vegan bakery to be opening in Chicago. @scoopsdessertbar was nice enough to drop off a sampler box of their treats for me to try today and everything is seriously delicious! 10/10 would recommend!

Josh said this was “the best dinner he’s had in ages” and it was incredibly easy so I figured I’d share.

This week’s biscotti flavor is gingerbread white chocolate. Currently enjoying one with a big cup of coffee ☺️. Check out my chocolate, cherry almond biscotti recipe at www.idonteatnowheat.com, link in bio!

Today’s lunch was so simple and delicious! Cherry tomatoes and buratta with a drizzle of balsamic glaze and olive oil. I cracked some black pepper and salt on top and if it with some homemade gluten-free bread. I’m already thinking about having it again tomorrow.
